Olive & Vine Ceviche

Ingredients

1-1/2 cod or halibut
2 cups, 4 oz. lime juice
2 oz. yellow onions
4 oz. English cucumbers
1 oz. jalapenos (seeds removed)
½ oz. cilantro
6 oz. avocado
3 oz. tomato sauce
6 oz. ketchup
2 oz. orange juice
4 oz. lime juice
½ tsp. chili powder
½ tsp. salt

Preparation

  1. Dice the fish into 1/2" pieces. Combine with 2 cups of the lime juice and allow to marinate for 45-60 minutes, stirring occasionally. 
  2. Dice the onions and cucumbers into 1/4" pieces and add to a bowl.
  3. Mince the jalapenos and cilantro and add to the bowl.
  4. Dice the avocado into 1/2" pieces and add to the bowl. Mix the onions, cucumbers, jalapenos, cilantro and avocado until combined. 
  5. In a separate bowl, combine the tomato sauce, ketchup, orange juice, 4 oz of the lime juice, chili powder and salt. Whisk together thoroughly and then add it to the vegetable and avocado mixture. 
  6. Drain the lime juice from the fish and discard the juice.
  7. Add the drained fish to the mixture and mix gently, being careful not to break up or shred the fish. 
  8. Add more salt to taste if needed.
  9. Serve with tortilla chips or tostadas.
