Ingredients
1-1/2 cod or halibut
2 cups, 4 oz. lime juice
2 oz. yellow onions
4 oz. English cucumbers
1 oz. jalapenos (seeds removed)
½ oz. cilantro
6 oz. avocado
3 oz. tomato sauce
6 oz. ketchup
2 oz. orange juice
4 oz. lime juice
½ tsp. chili powder
½ tsp. salt
Preparation
- Dice the fish into 1/2" pieces. Combine with 2 cups of the lime juice and allow to marinate for 45-60 minutes, stirring occasionally.
- Dice the onions and cucumbers into 1/4" pieces and add to a bowl.
- Mince the jalapenos and cilantro and add to the bowl.
- Dice the avocado into 1/2" pieces and add to the bowl. Mix the onions, cucumbers, jalapenos, cilantro and avocado until combined.
- In a separate bowl, combine the tomato sauce, ketchup, orange juice, 4 oz of the lime juice, chili powder and salt. Whisk together thoroughly and then add it to the vegetable and avocado mixture.
- Drain the lime juice from the fish and discard the juice.
- Add the drained fish to the mixture and mix gently, being careful not to break up or shred the fish.
- Add more salt to taste if needed.
- Serve with tortilla chips or tostadas.
