A bowl of pureed yams

Yam Purée

Serves 4

Ingredients

1lb of yams
Water (enough to cover yams in a pot)
Salt and pepper to taste

Preparation

  1. Peel yams and dice into 1” cubes
  2. Add yams into boil and add in enough water to cover the yams
  3. Heat up pot to a soft boil and cook for about 15 minutes. Yams should be done if you’re able to poke with a fork and yams don’t stick to it.
  4. Once yams are done, use a strainer and strain the yams from the water
  5. Transfer yams into mixing bowl. Use a whisk and/or potato masher to break down.
  6. Season with salt and pepper to taste
