Ingredients
- 15 oz. can of tomato sauce
- 15 oz. can of diced tomatoes
- 1 lb. ground turkey
- 15 oz. can of kidney beans
- 15 oz. can of garbonzo beans
- 1/2 yellow onion, chopped
- 2 medium zucchini, chopped
- 1 cup carrots, chopped
- 2 cloves of garlic, chopped
- 3 Tbsp. chili powder
- 2 tsp. cumin
- 3 tsp. oregano
- 2 tsp. paprika
- salt and pepper, to taste
Preparation
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, zucchini, and ground turkey. Cook until turkey is browned.
- Dump both cans of beans into a strainer and rinse.
- Add beans, tomato sauce, diced tomatoes with juice, carrots, and seasonings.
- Reduce heat, and let simmer for about 30 minutes.
- Add additional seasonings to taste.
