Ingredients

  • 15 oz. can of tomato sauce
  • 15 oz. can of diced tomatoes
  • 1 lb. ground turkey
  • 15 oz. can of kidney beans
  • 15 oz. can of garbonzo beans
  • 1/2 yellow onion, chopped
  • 2 medium zucchini, chopped
  • 1 cup carrots, chopped
  • 2 cloves of garlic, chopped
  • 3 Tbsp. chili powder
  • 2 tsp. cumin
  • 3 tsp. oregano
  • 2 tsp. paprika
  • salt and pepper, to taste

Preparation

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, zucchini, and ground turkey. Cook until turkey is browned.
  3. Dump both cans of beans into a strainer and rinse.
  4. Add beans, tomato sauce, diced tomatoes with juice, carrots, and seasonings.
  5. Reduce heat, and let simmer for about 30 minutes.
  6. Add additional seasonings to taste.
