Roasted Winter Squash Seeds

Roasted squash seeds are a delicious, easy to make, healthy snack. Just one quarter cup is a good source of vitamins, minerals, protein and fiber. They’re crisp, crunchy and adaptable to your favorite seasonings.

Ingredients

  • 1 cup butternut squash seeds, acorn or pumpkin seeds
  • 1 tablespoon olive oil
  • Kosher salt to taste (Note: try also adding garlic powder, cumin or other favorite seasonings)

Instructions

  1. Preheat oven to 275 degrees.
  2. Line baking sheet with parchment paper or aluminum foil.
  3. Rinse seeds and pat dry.
  4. Place in bowl.
  5. Stir with olive oil and salt.
  6. Spread coated seeds in single layer on baking sheet.
  7. Bake for 15 minutes.
  8. Remove from oven. Cool before serving.
